I make this Indian carrot salad most of the time. It's delectable and goes well with any food. This vegan and vegetarian dish is a feel-good dish that also tastes excellent. It's the most straightforward salad ever!

Indian carrot salad recipe is vegan, vegetarian, gluten-free, healthy recipe. Made with unprocessed natural ingredients, a guilt-free compliment tastes great as well. The easiest salad ever!

The recipe title included 'Indian' for its zingy taste, definitely not for its ingredients. The ingredients in Indian carrot salad are universal and commonly available in every kitchen in Western countries(like this Indian quinoa salad and cucumber mango salad).

It is a delectable grated carrot salad recipe with a lingering taste. The lemon juice mellows the carrot's crisp texture, making it easy to chew.

I can relish the salad in every meal, regardless of season or weather. This Indian carrot salad tastes like bundles of layers.

I make more than the required quantity, as it vanishes before hitting the dining table.

Although carrot Indian salad is a standard side dish recipe in our home, I never thought of sharing it online as I assumed everyone already knew it until a reader recently asked for it.

The Ingredients

This is simple: you need not follow strict rules. It gives total freedom for enhancing and improving.

  • Carrot. Any variety is compatible with this recipe. Grated carrots have more potential to absorb the other ingredients. But if grating seems complicated, you can chop it finely.
  • Lemon juice. It gives a refreshing taste and is added for its acidic value. However, the best alternatives are lime juice, vinegar, and apple cedar vinegar.
  • Salt. The salt quantity will be slightly higher than usual to compensate for the acidity of the lemon juice. The lower the lemon juice, the less salt is needed. So adjust these accordingly to suit your preference.
  • Curry Powder is added solely for the mild Indian flavor, but it is optional. Skip it if your pantry does not have the stock.
  • Green Chili Pepper. You can get them in your local Indian or Asian stores. Thai green chili or serrano peppers are the best substitutes. Deseed them for gently spiced Indian carrot salad.

How To Make Indian Carrot Salad?

  • Grate the carrots using a mandolin or food processor.
  • Combine grated carrot, lemon juice, green chili pepper, curry powder, and salt in a mixing bowl.
  • And serve.

How To Store The Leftovers?

  • This salad tastes fabulous when made and is enjoyed immediately. However, leftovers can be stored in the refrigerator for about one day.
  • And this is not a freezer-friendly recipe, as the carrot becomes soggy once frozen and thawed.

  • Veggies: Add in other grated vegetables like turnips and beets.
  • Toppings: Sliced almonds, fried cashews, and walnuts are my choice.
  • Herbs: Garnish this salad with chopped mint leaves or with cilantro.
  • Beans: Stir in cooked chickpeas or lentils to serve a satisfying meal.

  • Rice & Grains: Serve with steamed or flavored rice.
  • As a Dip: Serve with chips like spicy tortilla chips or cream cheese stuffed mini peppers.

Ingredients

  • 2 cups carrot grated
  • 2 tablespoon lemon juice
  • ½ teaspoon salt
  • 1 tablespoon green chili pepper minced
  • ½ teaspoon curry powder

Instructions

  1. In a mixing bowl, add grated carrot, lemon juice, salt, minced green chili pepper, and curry powder.
  2. Gently combine all the ingredients together.
  3. Serve as a condiment.

Notes

Grated carrots absorbs lemon juice well, alternatively use finely chopped carrots.
Deseed the green chili pepper for gently heat.
