How does this hot sauce taste like?
This recipe is a beautiful blend with the right amount of sweetness. Sour and mildly hot with the intense flavors of pineapple jalapeno.
I did mention it is mildly hot, as I added only the jalapeno's flesh. I removed the innards and the seeds to keep the heat low. But you may increase the heat by adding the seeds. We will discuss this in more detail below.
The key ingredients and their possible substitutions
Pineapple. Since these are in season now, I used them as fresh. I live in central Pennsylvania and get fresh pineapple throughout the year in the store. These are naturally with intense flavors and taste sweet and sauces. Which works great in this sauce.
Instead, you may substitute with frozen pineapples.
Jalapeno. Added for its heat and bold flavors in this pineapple jalapeno sauce. When this meets with the pineapple, the results are incredible. You may use fresh or preserved ones like this roasted jalapeno.
Vinegar. White vinegar is best to preserve the natural aroma of our key ingredients. Apple cider vinegar is a good substitute but counteracts the pineapple's delegated aroma.
Lemon juice. This brings together the sourness of the pineapple and the vinegar. You may skip using it, as it does not affect the taste adversely.
Sweet onion. Sweet onion is the best in creating the texture and neutralizing the intense sourness. Yellow onion is equally good, next to red onions.
Garlic cloves. It is one of the key ingredients that cannot be missed or substituted. A small quantity does huge magic in here. I would not recommend replacing it with garlic flakes or garlic powder.

Variations
Make a wing sauce. Cook this jalapeno pineapple sauce over low flame for 10-15 minutes until it thickens. Then, dilute to a flowing consistency with water. Please bring it to a boil until it reaches the desired consistency.
This coats the chicken wings perfectly, making them finger-licking good. Moreover, you may use this as a glaze sauce as well.
Grilled pineapple. Gives a whole new look to this tropical hot pineapple jalapeno sauce. The grill makes the fruit's edges caramelized, which works well here.
FAQ
I wanted to have the hot sauce to be on the milder side. Hence, remove the pith and the seeds. You may increase the heat by leaving some seeds intact before blending.
This sauce is excellent to serve wherever salsa is fit.
If you prefer spicy sauce, add half a teaspoon of cayenne pepper.
