2 cups adzuki beans or lentils 2 tablespoons vegetable oil   ½ cup chopped onion  1 tablespoon grated ginger  1 tablespoon grated garlic  1 cup fresh tomato puree

2 teaspoons red chili powder or cayenne pepper  1 teaspoon coriander powder 3 cups water (or enough to submerge the beans)  1 teaspoon salt  1 teaspoon Madras curry powder  2 tablespoons chopped cilantro  2 tablespoons butter

In instant pot sauté mode, cook onion in vegetable oil until translucent. Add ginger, garlic, tomato puree, and spices. Cook until thickened.

Add beans and water, cook in manual mode for 15 minutes, allow pressure to release for 20 minutes. Crush half of the lentils with a spoon.

Add 1 teaspoon of salt, 2 tablespoons of Madras curry powder, and adjust to taste. Garnish with 2 tablespoons of butter and a handful of chopped cilantro. Serve hot.
