Why I made biscuits with pancake mix? It is all because of the long winter; It's also raining outside. We are like hens caught in a cage, staring at the window.
My little guy at home was nagging me for snacks for the Teatime. He wished to have something crunchy and salty.
I was also in the mood to prepare a dish. My rolling eyes stopped at the big pockets of pancake mix I bought in the sale 'Buy one Get one free.' Yes, with little prep work, this is my choice, but it is the best satisfying snack for this rainy evening.
I went with the recipe on the carton, which requires mixing and baking. The prep work can be done while the oven is getting preheated. Yeah, this is as simple as this. Here comes the recipe.

The variations for biscuits with pancake mix
This is the basic recipe with minimal ingredients. If you want, add your favorite ingredients to make them rich and whole.
Nuts. Want to serve fussy-eating kids? Add in dry fruits and nuts. This makes the biscuits load with more nutrients.
Fruits. Add in chopped fresh fruits. But remove its moisture content to avoid resulting in soggy biscuits.
Vegetables. Green vegetables like spinach, zucchini, broccoli, and green peas are the best to add to the dough.
Herbs. Nothing can beat the taste of spices. Add mint leaves, cilantro, sage, and basil for more flavorful biscuits. You can add them as fresh or dried herbs. Also, make these biscuits with pancake mix that tastes exceptionally well.
Storage Tips
These biscuits out of pancake mix taste incredibly delicious on the day it is made. And it also tasted better with more flavors on the next day.
To Store. The moisture is the main culprit to destroy the taste and texture of these crunchy biscuits. These pancake biscuits can last longer when stored ideally. For this, always allow the biscuits to reach room temperature. Use wire racks to make the biscuits cool evenly.
Arrange these biscuits with pancake mix in an airtight jar. Make a lining with a paper towel at the bottom of the jar. Now arrange a layer of biscuits. Top with another paper towel and make another layer of biscuits. Repeat and rinse until the jar is full or the biscuits are over.
And secure with an airtight lid. The paper towel helps absorb the excess moisture and keeps the biscuits crispy and crunchy longer.
To Freeze. Store them in airtight containers or zip-lock bags—this you can store for up to 2 months. For thawing, Keep it at room temperature for a day and reheat it in the microwave for a few seconds.
How to make:
Add a cup of pancake mix, oil, warm milk, salt, and coarsely ground pepper.
Add 1 tablespoon of oil extra to the dough to get softer and crispier biscuits. Combine all the ingredients to form the soft dough. Knead them at least for 5 min. The more you knead, the smoother the cookies will be.
Preheat the oven to 450 degrees Fahrenheit. Make the dough into small balls or any desired shapes. Spread them over the lined baking tray.
Gently press them to form a flat, smooth circle. Make sure it creates a more seamless process. Otherwise, it will get cracked once baked. Bake it in the oven at 450 degrees Fahrenheit for 10 minutes and then another 3 min at 180 degrees Fahrenheit. Remove it from the oven and let them cool to room temperature.
Serve Biscuit with Tea or coffee with a chocolate drizzle or tomato sauce. You can have it either way.

Ingredients
- 1 cup pancake mix
- 4 tablespoon vegetable oil
- â…™ cup milk warm or as desired
- ¼ teaspoon salt or as required
- 1 tablespoon whole black pepper coarsely ground
Instructions
- Preheat the oven to 450 Fahrenheit degrees.
- In a mixing bowl, add pancake mix, vegetable oil, warm milk, salt, and black pepper.
- And combine all the ingredients to form the soft dough.
- Knead them well for 5 minutes.
- Make the dough into small balls. Spread them over the lined baking tray.
- Gently press them on the top to form a flat smooth circle without any cracks on the sides.
- Bake it in the preheated oven for 450 Fahrenheit degrees for 10 minutes and then another 3 min in 180 Fahrenheit degrees.
- Remove it from the oven and let them cool to the room temperature in a wire rack.
- Serve Biscuit with Tea, Coffee.

I went with the regular pan cake mix, which has egg as an ingredient. Vegan version of pan cake mix can also do its job perfectly.
